Pumpkin Chocolate Truffles

No-Bake Fall Treat

Recipes don’t get easier than this one. This recipe is no-bake and is made using only three ingredients. It takes 5 minutes to come together, and the longest part is just waiting for the bites and chocolate to set.

When fall hits I add pumpkin puree to just about any recipe I can. These truffles are basically just a mix of random ingredients thrown together that ended up tasting super good.

If you are a lover of the pumpkin and chocolate combination you have to try these. You can add in whatever you want to customize these. You can add pumpkin pie spice, cinnamon, nuts, raisins, the list goes on.

While these make a delicious dessert, they also make a great snack. Since these have protein powder, they will help keep you full. Also, if you don’t add sugar, these truffles have very little added sugar. You can make them zero sugar if you use no-sugar-added chocolate.

 I always get questions about the protein powder I use. I would recommend Legion. Every plant-based flavor tastes delicious and doesn’t have the usual chalkiness taste to it that normal plant-based proteins have. I typically use the vanilla flavor when baking.

Protein powder: I used vanilla plant-based protein powder. You can use any flavor you want. You could also replace the protein powder with coconut flour, almond flour, or any flour you want. The measurements WILL BE different if you use another flour.

Sugar: I would recommend using coconut sugar. However, you can use any sweetener you want. Maple syrup, agave, date syrup, etc.

Chocolate chips: any chocolate chips will work. You could also chop a chocolate bar. White chocolate works well with these bites as well.

Ingredients:

  • Pumpkin puree

  • Protein powder

  • Chocolate chips

  • Optional: sugar

Recipe:

  • 1 cup pumpkin puree

  • 1/3-1/2 cup protein powder

  • Optional: 1/3 cup sugar

  • 1 cup chocolate chips

Directions:

1.    In a bowl mix together the pumpkin puree, protein powder, and sugar if you are using. Mix until a dough is formed, and you are able to roll into bites. If the mixture is too wet, add more protein powder or another flour of choice.

2.    Once you have reached the correct consistency, use a tablespoon measuring spoon to scoop all the dough and roll into balls. Place in the refrigerator for an hour.

3.    After the hour, melt the chocolate and coat each bite into chocolate.

4.    Place in the refrigerator again to allow the chocolate to harden.

Be sure to store the bites in the refrigerator or freezer. The bites should last up to 5 days in the refrigerator. You can prep a large batch and store in the freezer. It should last for a month minimum. I prefer storing mine in the freezer for an ice cream bar type dessert.
