S’mores Cookie Bars

Cookie Dough, Marshmallow, & Chocolate Layers

Vegan butter: any vegan butter will work. You can also try liquid oil or normal butter if you aren’t vegan.

Sugar: I used white sugar in this recipe to ensure the dough didn’t change a different color. You could use any granulated sugar of your choice.

Nondairy milk: I always use unsweetened almond milk. Any nondairy milk will work. If you aren’t vegan, traditional milk should also work.

Vanilla extract: the vanilla gives the cookies an extra burst of flavor. You can omit if you want or use almond extract.

All-purpose flour: I haven’t tested any other flours in this recipe.

Vegan marshmallows: I find my vegan marshmallows at Trader Joes or Whole Foods. If you aren’t vegan, normal marshmallows also work. I

Vegan chocolate chips: any chocolate chips will work.

 Ingredients:

  • Vegan butter

  • Sugar

  • Nondairy milk

  • Vanilla extract

  • Baking powder

  • All-purpose flour

  • Vegan marshmallows

  • Vegan chocolate chips

  • Optional: graham crackers

Recipe:

  • 6 tablespoons vegan butter

  • 2/3 cup sugar

  • ¼ cup nondairy milk

  • 1-2 teaspoons vanilla extract

  • 2 teaspoons baking powder

  • 1 1/3 cup all-purpose flour

  • About ½ cup marshmallows (can do more or less)

  • About ¾ cup chocolate chips (can do more or less)

Directions:

1.    Preheat the oven to 350 degrees Fahrenheit. Line a baking pan with parchment paper or spray with cooking spray.

2.    In a small bowl melt the butter. Transfer to a larger bowl and add in the sugar, nondairy milk, and vanilla. Stir to combine.

3.    Add in the baking powder and flour. Stir until a dough is formed.

4.    Transfer ¾ of the dough to the baking pan. Press flat and evenly spread across the bottom. Add the marshmallows and chocolate chips on top. If using graham crackers, add crushed ones here. About 1/3 cup. Be sure to press all toppings slightly into the dough.

5.    Use the remaining dough to crumble on top.

6.    Bake for 25-30 minutes or until a toothpick comes out clean.

Be sure to store the bars in an airtight container in the refrigerator. The bars should last up to one week. You can store in the freezer to last longer.
