The BEST Fluffy Grain free, Blueberry Banana Crumb Loaf
Fluffy banana blueberry loaf bursting with flavor
Have any extra super ripe bananas sitting on your counter? You have to try this blueberry banana crumb loaf. It is bursting with flavor from the sweet blueberries and bananas. I especially love how simple this recipe is. Everything is thrown together into one bowl, and you can even reuse the same bowl for the crumb topping. This recipe is made with all my favorite healthier ingredients including flax eggs, almond butter, and almond flour.

Bananas
Almond milk
Coconut sugar
Almond butter
Baking powder
Almond flour

My favorite brand for the flax seeds is definitely Bob's Red Mill. I love buying my coconut sugar on Amazon as it’s the cheapest place I’ve seen it. For almond butter, it can definitely get pricey. I would highly suggest ordering a big jar from Amazon, buying from Trader Joes or Costco.
Always make sure when buying almond butter, the only ingredient is almonds. For the almond flour, I only buy mine from Amazon. You can get a huge bag at the cheapest price I have ever seen.
Recipe
2 flax eggs
2 bananas
½ cup almond milk
¼ cup coconut sugar
½ cup almond butter
2 teaspoons baking powder
1 cup almond flour
1/2 cup blueberries
Crumble
1 tablespoon vegan butter softened
1 tablespoon coconut sugar
1 tablespoon applesauce
¼ cup rolled oats
¼ cup almond flour
½ teaspoon cinnamon
Directions
Begin by creating your flax eggs. The ratio is 1 tablespoon of flaxseed meal to 3 tablespoons of water. For two flax eggs, you would just double this.
In your mixing bowl, add the bananas and mash well.
Once the flax mixture has gelatinized and has the texture of an egg, add it to a mixing bowl.
Pour in almond milk.
Pour in coconut sugar.
Add almond butter.
Mix until well combined.
Add in baking powder.
Add in almond flour.
Mix until well combined.
Add to a 9x5 baking pan.
In the bowl, add the softened butter, sugar, and applesauce and mix.
Add in the oats, almond flour, and cinnamon and mix until crumble forms.
Add crumble on top of batter.
Bake at 350 degrees Fahrenheit for 40-45 minutes.
Once cooled add your glaze. The glaze is a mixture of powdered sugar and almond milk
Slowly add each to a bowl and whisk until desired texture forms.
