Nothing Beats A Fudgy Double Chocolate Chip Cookie, Especially When It’s Vegan And Gluten-Free
All my chocolate lovers, this recipe is for you! I have made this recipe more times than I can count and every time I am amazed at how good it is. When you are craving a super fudgy, filled with chocolate cookie but don’t want all the refined sugars, oils, and grains this recipe is for you.
This recipe takes no more than 20 minutes from start to finish so it’s the perfect spur of the moment cookie craving recipe. I love switching up the chocolate I used in this.
Vegan chocolate chips, vegan white chocolate, chopped chocolate bars, literally any and all chocolate in these tastes so delicious. I love the simplicity of these. They require no chilling of the dough, so it makes the process even faster. You can also leave out the baking powder and eat the dough raw.
I use cacao powder in this recipe; however, cocoa powder will work just as well. Cacao powder is the less refined version of cocoa powder but isn’t as easily available as cocoa powder.
For the best tasting cookie in my opinion, I would use almond butter. However, any nut or seed butter will work. If you use peanut butter keep in mind that it will have a very strong flavor and may take over the cookie. Whereas something like almond or cashew butter will have less of a strong flavor.
To keep my recipes refined sugar-free, I always use coconut sugar. If you don’t have coconut sugar, any granulated sugar will work. Be sure it is granulated as a liquid sweetener will throw off the texture of the cookies. The two other main granulated sugars are white or brown sugar.
Ingredients
Almond butter
Applesauce
Coconut sugar
Baking powder
Cacao powder
Almond flour
Chocolate chips
Recipe
½ cup almond butter
1/3 cup applesauce
1/3 cup coconut sugar
½ teaspoon baking powder
1/3 cup cacao powder
½ cup almond flour
1 cup chocolate chips (or however many or little you want)
Directions
In a mixing bowl combine almond butter, applesauce, and coconut sugar.
Stir well.
Add in the baking powder, cacao powder, and almond flour.
Mix well.
Fold in the chocolate chips.
Take a cookie scoop and add a scoop of each to a lined baking tray.
Bake at 350 degrees Fahrenheit for 12-14 minutes.
