Flavor Packed Banana Chocolate Chip Muffins That Are Also Refined Sugar-Free!

There is nothing better than a fresh batch of banana chocolate chip muffins. Searching on Google there are countless banana muffin recipes, but these are a MUST. They are made with just one bowl and few ingredients.

I love the versatility of these, you can add chocolate chips, nuts, dried fruits, just about anything. They are perfect for meal prep, just whip up a batch on a Sunday and have them for the whole week.

They are a perfect quick breakfast, snack, or treat. I love adding a little nut butter on them to make them even more filling and satisfying.

Speaking of nut butter, in the actual recipe I use almond butter, however, any will work. If you want a peanut butter banana flavor muffin, definitely use peanut butter!

For this recipe it is highly suggested your bananas are ripe. The recipe won’t turn out as good if the bananas are under ripe.

TIP: if you want to make this recipe or any recipe that calls for ripe bananas, but they aren’t ripe, I have a perfect tip for you. Place your unripe bananas on a baking tray. Set your oven to 300 degrees Fahrenheit and keep them in there until they turn black. There isn’t an exact time just be sure to watch them. Once they are done, they will be perfectly ripe!

Ingredients

  • Bananas

  • Flax eggs

  • Almond butter

  • Applesauce

  • Baking powder

  • Almond flour

  • Cinnamon (optional)

  • Chocolate chips

Recipe

  • 2 large bananas

  • 2 flax eggs

  • ½ cup nut butter

  • ¼ cup applesauce

  • 1-2 teaspoon cinnamon

  • 2 teaspoon baking powder

  • 2/3 cup almond flour

  • 1 cup chocolate chips

Directions

  1. Line a cupcake tray with silicone or any liners.

  2. Preheat the oven to 350 degrees Fahrenheit.

  3. Start by creating the flax eggs. One flax egg is 1 tablespoon of water to 3 tablespoons of flaxseed meal. For two, just double it.

  4. In a mixing bowl add the bananas and mash well.

  5. Stir in the nut butter and applesauce.

  6. Once the flax eggs have formed add that in as well.

  7. Stir until combined.

  8. Add in the cinnamon, baking powder, and almond flour.

  9. Stir well.

  10. Fold in your choice, I used chocolate chips. Anything will work or nothing at all.

  11. Bake for 20- 25 minutes.
