Vegan butter: any vegan butter will work. You could also try liquid oil. If you aren’t vegan, traditional butter should work.
Coconut sugar: I like to use coconut sugar as it is refined sugar free. Any granulated sugar will work such as monk fruit or white sugar.
Maple syrup: I used maple syrup in this recipe as it works well with the coconut sugar. Any liquid sweetener will work such as honey or agave.
Nondairy milk: I used unsweetened almond milk in this recipe. Any nondairy milk will work. If you aren’t vegan, traditional milk should also work.
All-purpose flour: I haven’t tested any other flours in this recipe.
Chocolate chips: any chocolate chips will work.
Ingredients:
Applesauce

Coconut sugar

Nondairy milk

Recipe:
1 1/2 cup applesauce
4 tablespoons vegan butter
¼ cup coconut sugar
3 tablespoons maple syrup
¼ cup nondairy milk
2 teaspoons baking powder
1 1/4 cup all-purpose flour
1/4 cup cacao powder
1 cup chocolate chips (can do more or less)
Glaze:
1 cup powdered sugar
3 tablespoons cacao powder
2-5 tablespoons nondairy milk (less milk= thicker glaze, more milk= runnier glaze)
Directions:
Step 1: Preheat Your Oven
Start by preheating your oven to 350°F (175°C). Grease a baking pan or line it with parchment paper to ensure your bars come out easily.
Step 2: Prepare the Bar Batter
In a large mixing bowl, combine the applesauce, vegan butter, coconut sugar, and maple syrup. Use a whisk or hand mixer to beat these ingredients together until smooth and creamy. Add in the nondairy milk and continue mixing until well incorporated.
In a separate bowl, mix the baking powder, all-purpose flour, and cacao powder. Gradually fold this dry mixture into the wet ingredients. Stir until everything is just combined, ensuring the batter is smooth and uniform. Finally, fold in the chocolate chips—the more, the better!
Step 3: Bake the Bars
Pour the batter into the prepared baking pan and spread it evenly. Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean. Let the bars cool completely in the pan before removing them and preparing the glaze.
Step 4: Prepare the Chocolate Glaze
While the bars are cooling, make the chocolate glaze. In a small bowl, combine the powdered sugar and cacao powder. Gradually add the nondairy milk, 1 tablespoon at a time, stirring to reach your desired glaze consistency. For a thicker glaze, use less milk; for a runnier glaze, add a bit more milk.
Step 5: Glaze the Bars
Once the bars have cooled, pour the glaze over the top and use a spatula to spread it evenly. Allow the glaze to set for a few minutes before slicing and serving.
