Five Ingredient Sugar Cookie Bars

I first made these sugar cookie bars around Christmas time and wow I’m so glad I did. They have the perfect soft texture. You would never guess these are vegan, gluten-free, and grain-free. They are made with such simple ingredients; this recipe has definitely become a staple in my house. I love making these for any holiday or festivity by changing out the sprinkles.

For Christmas I used red and green sprinkles, and for Valentine’s Day I used pink, red, and white hearts. They are so festive for any occasion or just for everyday eating.

When making these I typically use a store-bought frosting to make it easier but literally any frosting will work.

Not only does this recipe work perfectly for a sugar cookie bar but also as normal sugar cookies. I use this recipe all the time as the base for so many of my other recipes. You can’t beat a four-ingredient recipe that turns out so delicious each time.

I prefer maple syrup in all my recipes; however, agave or date syrup should work just as well. Date syrup will change the color of the bars, but if you don’t mind that the texture should remain the same.

The only flour that will work is almond flour. Any other flours will alter the texture and the recipe will not come out the same.

An option to add to this recipe is almond extract. It is the secret ingredient to get the bars tasting like a traditional sugar cookie. Without it, the recipe will still be delicious. The extract just adds to the deliciousness.

Ingredients

  • Almond flour

  • Baking powder

  • Maple syrup

  • Applesauce

  • Optional: frosting + sprinkles + almond extract

Recipe

  • 2 cups almond flour

  • ½ teaspoon baking powder

  • ¼ cup maple syrup

  • ¼ cup applesauce

Directions

  1. Start by preheating your oven to 350 degrees Fahrenheit.

  2. In a mixing bowl add in the applesauce and maple syrup.

  3. Stir till combined.

  4. Add in the almond flour and baking powder.

  5. Stir until the dough forms.

  6. Press down into a 9x5 baking pan.

  7. Bake for 15-20 minutes.

  8. Once completely cooled add your frosting and sprinkles.

  9. Store in the refrigerator in an airtight container.
