Vegan White Chocolate Sugar Cookie Truffles

When You Combine Sugar Cookies And Truffles To Make The Ultimate Vegan Dessert

I originally made these for Valentine’s Day and am so glad I did. The perfect no bake, super quick, and delicious treat.

If you’re a sugar cookie lover, you have to try these. These are grain-free, gluten-free, and refined sugar-free. I love the convenience of these, super easy to add to a container and take on the go as a quick snack.

For this recipe I use coconut flour. Coconut flour has a very different texture from any flour and absorbs liquid with a lot less flour than a normal flour would. I would really suggest sticking to coconut flour for this recipe. It’ll be hard to achieve the same texture with a different flour.

For the chocolate, I coated these in white chocolate. Obviously, you can coat these in whatever chocolate you want.

I love using maple syrup as my liquid sweetener; however, agave would work as well. Make sure to only use a liquid sweetener as a granulated one would affect the texture and outcome of the recipe.

Applesauce is one of my favorite ingredients to use in baking. It creates a very fudgy texture and can be used in place of oil or butter to keep the recipe a little healthier.

I have gotten a bunch of questions where the sprinkles I have been using in my Valentine’s Day recipes are from. They are from Tj Maxx. Obviously, any sprinkles will work, they were just extra cute!

Ingredients

  • Applesauce

  • Almond butter

  • Sugar

  • Vanilla extract

  • Almond flour

  • Coconut flour

  • White chocolate

  • Sprinkles

Recipe

  • 1/2 cup applesauce

  • 1/3 cup almond butter

  • 1/3 cup sugar

  • 1 teaspoon vanilla extract

  • 1 cup almond flour

  • 1/3 cup PLUS 2 tablespoons coconut flour

  • 1 cup white chocolate

  • ¼ cup sprinkles (more or less depending how many you like)

Directions

  1. In a mixing bowl add the applesauce, almond butter, sugar, and vanilla extract. Stir until combined.

  2. Add in the almond flour and coconut flour. Stir until a dough is formed.

  3. Use a cookie scoop to scoop the dough into balls. Place on a tray/plate and into the refrigerator for 30 minutes.

  4. After the 30 minutes, melt the chocolate. Dip each ball into the chocolate. Add the sprinkles on top. Place back in the refrigerator to allow the chocolate to harden then, enjoy!
