Vegan Marble Loaf

Swirls Of Chocolate and Vanilla Goodness 

One of my all-time favorite treats as a kid was the Starbucks marble loaf. If you have had that you know just how good, it is. Since becoming vegan I knew I had to re-create this.

This recipe has become one of my most popular on Instagram and for good reason. The chocolate and vanilla swirls with melty chocolate chips makes the perfect treat ever.

This loaf has the best texture from the applesauce. I love having fun with this recipe by using a toothpick to create swirls and seeing the outcome at the end. This loaf can also easily be made into cupcakes or muffins if you prefer that!

This recipe calls for two flax eggs. To make a flax egg you need to combine 1 tablespoon of flax seed meal to 3 tablespoons of water for one egg. For two, just double that. You do not need to mix it a lot. Just one mix to combine the water and flax is all you need.

The most important part is to allow it to sit. A common question I get is how to know when your flax egg is ready to be used. You want to wait at least 5 minutes. Once you notice the mixture has gotten gelatinous it is ready. 

Depending on the items you have on hand there are a few ingredients that can be substituted in this recipe.

Coconut sugar: any granulated sugar you have (white, brown, monk fruit, etc.) Make sure it is GRANULATED not liquid.

Maple syrup: agave or date syrup.

Almond butter: any nut or seed butter (sunflower, cashew, etc.) I would not recommend peanut butter as that will mask the flavor of everything else.

Almond milk: any non-dairy milk will work.

Cacao powder: cocoa powder will work too.

I would highly suggest not substituting the all-purpose flour as I have not tried any other flours for this recipe.

 Ingredients:

  • Flax eggs

  • Maple syrup 

  • Coconut sugar 

  • Applesauce 

  • Almond butter

  • Almond milk

  • Baking powder

  • All-purpose flour

  • Cacao powder

  • Chocolate chips

Recipe:

  • 2 flax eggs

  • ¼ cup maple syrup

  • ¼ cup coconut sugar

  • 1/3 cup applesauce 

  • ½ cup almond butter

  • 1/3 cup almond milk

  • 2 tsp baking powder

  • 2/3 cup all-purpose flour 

  • 2-3 tablespoons cacao powder

  • ½ cup – 1 cup chocolate chips (you can add however many you want)

Directions:

1.    In a bowl combine the flax seed meal with water. Set aside.

2.    In another bowl add the maple syrup, coconut sugar, applesauce, almond butter, and almond milk.

3.    Stir, then add the flax eggs, stir again.

4.    Add in the baking powder and all-purpose flour. 

5.    Stir until well combined.

6.    Fold in the chocolate chips.

7.    Split into two bowls.

8.    In one bowl add 2-3 tablespoons cacao powder.

9.    Stir well.

10.Take a 9x5 baking pan and layer each mixture.

11. Optional- you can use a toothpick to create swirls.

12. Bake at 350 degrees Fahrenheit for 27-30 minutes.

13. Allow to completely cool before enjoying.

Make sure to store in an airtight container in the refrigerator.
