Chocolate Covered Pumpkin Protein Bites

High Protein Fall Treat

These chocolate covered pumpkin protein bites are the perfect fall treat that is packed with protein and delicious flavors. You would never know these bites are made with healthier ingredients and even have extra protein to keep you fuller for longer.

I love having these prepped at the beginning of the week, so I always have an easy on-the-go snack. These are perfect for a snack, breakfast, or dessert.

 You can also add in whatever you want to these bites. For example, you could add crushed nuts, raisins, chocolate chips, etc.

 Pumpkin puree: be sure it is puree and not pumpkin pie filling.

Almond butter: any nut or seed butter will work. I would recommend sticking to almond, sunflower, or cashew butter as they aren’t as overpowering with flavor like peanut butter is.

Sugar: I used coconut sugar in this recipe as it is refined sugar free. Any granulated sugar will work.

Pumpkin pie spice: if you don’t have this, you can do a mixture of cinnamon, ginger, and cloves.

Protein powder: I used a plant-based vanilla protein powder. Any protein flavor will work. I would recommend sticking with vanilla or unflavored. I haven’t tested whey-based proteins in this recipe.

Almond flour: if you are looking to substitute the almond flour, you could add more protein powder, oat flour, or use coconut flour. The measurements WILL be different so I would recommend adding about ¼ cup at a time and stirring as you go. Once you reach a consistency that is able to be scooped and rolled into a ball you are good to go!

White chocolate: I used white chocolate in this recipe as I thought it would pair well with the pumpkin flavor. Vegan white chocolate can be hard to find, I always get mine on Amazon or at Whole Foods. You could use normal chocolate as well.


Ingredients:

  • Pumpkin puree

  • Almond butter

  • Sugar

  • Pumpkin pie spice

  • Protein powder

  • Almond flour

  • White chocolate

Recipe:

  • ½ cup pumpkin puree

  • 1/3 cup almond butter

  • 1/3 cup sugar

  • 2 teaspoons pumpkin pie spice (can do more or less)

  • ½ cup protein powder

  • ½ cup almond flour

  • 1 cup white chocolate

Directions:

1.    In a medium sized bowl combine the pumpkin, almond butter, and sugar.

2.    Add in the pumpkin pie spice, protein powder, and almond flour. Stir until a dough forms.

3.    Use a cookie scoop to scoop the dough. Roll into a ball with your hands. Place on a flat surface such as a cookie sheet. Repeat until all dough is used. Place in the refrigerator for 30 minutes.

4.    After the 30 minutes, melt the chocolate. I recommend adding ½ tablespoon of oil to the chocolate before melting. This makes it easier to coat the bites as the chocolate is runnier.

5.    Coat each bite in chocolate. Optional: top with a sprinkle of cinnamon. Place back in the refrigerator to harden for about 15 minutes.

 Be sure to store the bites in an airtight container in the refrigerator. The bites should last up to one-two weeks. You can store in the freezer to last longer. If you store in the freezer, allow to thaw on the counter for at least 15 minutes before eating.
