Vegan Chocolate Chip Cookies

The Chewiest Chocolate Chip Cookies Made with Healthier Ingredients 

This might be the easiest cookie recipe ever and one of the best I’ve made. They are made with only 6 ingredients and are super chewy and chocolatey. They remind me of the chewy Chips Ahoy cookies. 

Who doesn’t love cookies? I especially love when it’s a super easy recipe and everything is just mixed into a bowl. This recipe also doesn’t require chilling the dough so you can have your cookies even sooner. 

This recipe works perfect as the base for any flavor cookie. You can make them sprinkle sugar cookies by adding sprinkles, Oreo cookies, the list goes on. It is a super versatile recipe and can be adjusted to your preferences! 

Since this is a vegan recipe, I use flax eggs instead of traditional eggs.

How to make a flax egg:

For one egg the ratio is 1 tablespoon of flax seed meal to 3 tablespoons of water. For two, just double that. All you have to do is combine the ingredients, give it a quick mix, and allow it to set. After 5-10 minutes it will have formed into an egg-like texture.

Sugar: you can use any sugar you prefer, I used coconut sugar to keep it refined sugar free. (white, brown, monk fruit will work)

Vegan Butter: I prefer the brand Earth Balance when baking, any vegan butter will work. You could also probably use melted coconut oil or any oil in place of the butter if you prefer that. 

Chocolate Chips: any brand of chocolate chips or chocolate will work. You could even do a mix of normal and white chocolate. You could also chop up a chocolate bar and add it into the batter. 

I would NOT recommend substituting the almond flour. This flour helps to create the super chewy texture in these cookies. 

 Ingredients:

  • Flax eggs

  • Sugar 

  • Vegan butter

  • Baking powder

  • Almond flour

  • Chocolate chips

Recipe:

  • 2 flax eggs

  • 1/3 cup sugar

  • 1/3 cup melted vegan butter

  • ½ teaspoon baking powder

  • 1 cup almond flour

  • ½ cup – 1 cup chocolate chips

Directions:

1.    Preheat your oven to 350 degrees Fahrenheit.

2.    Line a cookie sheet with parchment paper or cooking spray.

3.    In a bowl combine the flax seed meal and water to create your flax egg.

4.    Set aside for 5 minutes.

5.    In a separate bowl melt the butter. 

6.    To the butter, add the sugar.

7.    Mix well.

8.    Add in the flax eggs.

9.    Mix well again.

10. Add in the baking powder and almond flour.

11. Mix until a dough forms.

12. Fold in the chocolate chips. 

13. Taking a cookie scoop, scoop the dough onto the baking tray.

14. Bake for 9-11 minutes.

Store the cookies in an airtight container in the refrigerator. You can also store in the freezer to have the cookies last longer.
