Vegan M&M Cookies

Nothing Beats the Classic Cookie

Nothing will ever beat M&M cookies. That’s why I had to create this recipe. Going vegan, I thought I’d never be able to have this cookie combination again, however, luckily, I was wrong.

This recipe is super easy and uses all simple ingredients. Everything is made in one bowl, so you don’t have to worry about a big mess after baking. There is also no chilling the dough, so the cookies are ready pretty quickly.  

These cookies are packed with chocolate chips and M&M’s. They don’t have a ton of added sugar, but still taste super delicious. The chocolate chips and M&Ms add a lot of sweetness to this recipe.

I wanted to keep the base of my cookies refined sugar free, so I used coconut sugar. Keep in mind, if you use coconut sugar it will turn the cookies a little more of a brown color than the traditional whiter color. Using white sugar will keep these cookies a lighter color.

Vegan butter: any vegan butter will work. I haven’t tested any nonvegan butter. However, I would assume it works as well.

Sugar: I used coconut sugar to keep it refined sugar free. Any GRANULATED sugar will work. Be sure to not sure liquid sweetener that will not work.

Chocolate chips: any chocolate chips will work.

Vegan M&M’s: I find mine at Whole Foods. If you want to use traditional M&M’s, that also works.

The base of these cookies can be used for any combination you want. You can add sprinkles, nuts, coconut, literally anything you want. Another combination I’d recommend is chocolate chips and peanuts. If you love peanut butter + chocolate, you will love this.

I haven’t tested any other flours besides the ones I used. The combination of almond flour and all-purpose flour works together to create a super good texture. I wouldn’t recommend using other flours.

 Ingredients

  • Vegan butter

  • Sugar

  • Applesauce

  • Baking powder

  • Almond flour

  • All-purpose flour

  • Chocolate chips

  • Vegan M&M’s

Recipe:

  • 3 tablespoons melted butter

  • 1/3 cup sugar

  • 1/3 cup applesauce

  • ½ teaspoon baking powder

  • 1 ½ cup almond flour

  • ¼ cup all-purpose flour

  • ½ cup chocolate chips

  • ½ cup vegan M&M’s

Directions:

1.    Preheat your oven to 350 degrees Fahrenheit.

2.    Line a cookie sheet with parchment paper or spray with cooking oil.

3.    In a small bowl, melt the butter.

4.    Once melted transfer to a larger bowl and add the sugar and applesauce.

5.    Mix well.

6.    Add in the baking powder, almond flour, and all-purpose flour.

7.    Stir until the dough forms.

8.    Fold in the chocolate chips and vegan M&M’s.

9.    Use a tablespoon measuring spoon and scoop the dough onto the tray.

10. Bake for 13-15 minutes.

Be sure to allow the cookies to fully cool. As they are cooling, they are also continuously cooking.

When eating them the next day, they taste best when they are put into the microwave for 30-40 seconds. I would also recommend adding a scoop of your favorite ice cream on top. It is so delicious!
