Nothing Beats a No-Bake 3 Ingredient Cookie

There will never be anything better than a no-bake, 3 ingredient recipe. Not only is it so simple and easy, but also everything just gets added to the blender.

If you don’t have a blender, a food processor will also work. You really just want to make sure the dates and coconut are fully blended together. 

Girl Scout cookie season is one of the best times of the year. Who doesn’t love Girl Scout cookies? I know I do.

Growing up samoas weren’t my favorite. However, I have grown to love them. This recipe tastes super similar in my opinion to the real thing. 

If you are vegan like me and can’t eat the real things, you have to try this recipe. Or, if you are looking for a healthier option to the traditional cookies.

Dates have become one of my favorite things to bake with and snack on. If you’ve never had a date, they are super sweet and give off somewhat of a caramel taste.

Dates are naturally sweet and have many nutritional benefits. Dates actually contain 50% more potassium than bananas. They are also super high in fiber and aid in digestion. 

Dates are super versatile when it comes to baking. They can be used in place of a lot of refined sugars. They also work to make a vegan alternative to caramel. 

In this recipe I used medjool dates. Any dates you have will work. For the coconut, I used shredded coconut. 

Any type of coconut will work. I would recommend using unsweetened. There is a lot of sweetness from the dates and chocolate, so you really don’t need it from the coconut. 

TIP: when melting your chocolate add around 2 teaspoons of coconut oil to the bowl. The oil helps to make your chocolate super smooth and easy to work with.

There are countless vegan chocolate brands nowadays. You can use your favorite chocolate in this recipe, doesn’t matter what kind. 

You could also make these into bites instead of cookies. Once you blend the dates and coconut, you can just take the mixture and roll it into a ball. Then, coat in chocolate.

 Ingredients:

  • Dates

  • Coconut 

  • Chocolate 

Recipe:

  • ½ cup dates (about 11-14)

  • ½ cup coconut 

  • 1 cup chocolate 

Directions:

1.    Start by soaking your dates in boiling water for 15 minutes.

2.    Drain the water after 15 minutes.

3.    Add dates and coconut to a blender.

4.    Blend until dates are broken down and combined with coconut.

5.    Take a tablespoon of the mixture and roll into a ball then press flat.

6.    Using a straw, poke a hole in the center.

7.    Repeat this with the rest of the mixture.

8.    Place in the freezer for 10 minutes.

9.    Melt your chocolate.

10. Dip the bottom of the cookie in chocolate.

11. Drizzle the top of the cookie with chocolate.

12. Repeat on all.

13. Place back in the freezer to harden.

Once hardened, enjoy! I personally love keeping mine in the freezer, but you can switch them to the refrigerator. make sure to store in an airtight container.
