Who Doesn’t Love a Dessert with Extra Protein?

Every time I make recipes with chickpeas, black beans, avocado, or something that doesn’t typically belong in baking I get very hesitate looks. Trust me when I tell you, you can’t taste the chickpeas in this recipe.

I love adding chickpeas to recipe to add extra protein and fiber. They also give the blondies the perfect texture. Chickpeas are one of the easiest things to sneak into baked goods.

If you have anyone in your life who refuses to eat chickpeas, make this for them! They will never know, and they get the nutrient benefits from chickpeas.

Chickpeas are a super healthy food. They are super high in soluble fiber which helps with digestion. They also have calcium and magnesium. 

My personal favorite part about this recipe is that everything is just added to a blender. It makes the clean-up super easy as there aren’t a bunch of dishes to clean.

If you don’t have a blender, a food processor will work as well. I would highly recommend one of the two options. If you were to mash the chickpeas by hand, you would still more than likely be left with chunks in the batter.

I often get the question of do you have to peel the chickpeas. The answer is no. I never peel mine when making this recipe.

However, make sure to RINSE and DRAIN your chickpeas. Rinsing them helps with digestion. We also don’t want the extra liquid in this recipe.

You can keep the liquid from the chickpea can and use it in other recipes. When whipped, it makes almost like a whipped cream consistency!

Coconut sugar: any granulated sugar will work. I prefer coconut to keep this recipe refined sugar free.

Almond butter: you can use any nut or seed butter you have or prefer. Almond butter is best in my opinion as it isn’t super overpowering. 

Almond milk: any nondairy milk will work.

Chocolate chips: any type of chocolate chips will work. You could also chop up a chocolate bar and use that instead.

I haven’t tested any other flours besides almond flour in this recipe.

 Ingredients:

  • Chickpeas 

  • Coconut sugar

  • Almond butter

  • Applesauce

  • Almond milk

  • Baking powder

  • Almond flour 

  • Chocolate chips 

Recipe:

  • 1 15 ounce can of chickpeas

  • 1/3 cup coconut sugar

  • ¼ cup almond butter

  • 1/3 cup applesauce

  • ¼ cup almond milk

  • 1 teaspoon baking powder

  • ½ cup almond flour 

  • ½ cup chocolate chips 

Directions:

1.    Preheat your oven to 350 degrees Fahrenheit.

2.    Line a 9x5 baking pan with parchment paper or cooking spray.

3.    Rinse and drain your chickpeas.

4.    To a blender or food processor add the chickpeas, coconut sugar, almond butter, applesauce, and almond milk.

5.    Blend until well combined.

6.    Add in the almond flour and baking powder.

7.    Blend again until there are no clumps. 

8.    Fold in the chocolate chips.

9.    Pour the batter into the baking pan.

10.Bake for 40 minutes or until toothpick comes out clean.

Allow the blondies to completely cool before eating!
