Strawberry Glaze Protein Bites

High Protein + Easy Snack

I am always thinking of new no bake + higher protein recipes to create. Since it is summer, I decided to create a strawberry version. These recipes are the best types of recipes to prep at the beginning of the week and have on hand for a quick snack or dessert.

This recipe is relatively low in sugar but still tastes delicious. You can also substitute the strawberries for just about anything. The base of this recipe can be made into countless variations.

Applesauce: I always use unsweetened applesauce. Ideally, you want the only ingredients to be apples and water. I find the recipe is sweet enough from the sugar and the glaze. However, you can use sweetened applesauce if you prefer. If you’re looking to substitute the applesauce, you could try mashed banana.

Almond butter: I prefer using almond butter for the taste; however, any nut or seed butter will work. Be sure it is on the runnier side rather than chunky.

Vegan yogurt: I used unsweetened cashew milk yogurt. Any nondairy yogurt will work. You could also use dairy yogurt if you’re not vegan.

Coconut sugar: I like using coconut sugar to keep this recipe refined sugar free. You can use any granulated sweetener of your choice. I haven’t tested any liquid sweeteners in this recipe.

Coconut flour: I like using coconut flour in a lot of no bake recipes. Also, it keeps the recipe gluten and grain free. If you don’t want to use coconut flour, you could use more protein powder or almond flour. The measurements WILL BE different so add slowly and continue to stir as you go until you reach a dough consistency.

Protein powder: I used an unflavored plant-based protein powder. Any flavor will work. I haven’t tested whey-based protein in this recipe.

Freeze-dried strawberries: you can use frozen or fresh strawberries as well. I find using freeze-dried ones helps to keep the bites from getting soggy.

Powdered sugar: you can use any powdered sugar of your choice.

Nondairy milk: I used unsweetened almond milk. Any nondairy milk will work. You can also use dairy milk if you’re not vegan.

Ingredients:

  • Applesauce

  • Almond butter

  • Vegan yogurt

  • Coconut sugar

  • Coconut flour

  • Protein powder

  • Freeze-dried strawberries

  • Powdered sugar

  • Nondairy milk

Recipe:

  • ½ cup applesauce

  • ¼ cup almond butter

  • ¼ cup vegan yogurt

  • ¼ cup coconut sugar

  • ½ cup coconut flour

  • 1 scoop protein powder (about 14.5 grams)

  • ½ cup freeze dried strawberries (crushed)

Directions:

1.    In a bowl combine the applesauce, almond butter, and vegan yogurt.

2.    Add in the coconut sugar, coconut flour, and protein powder. Stir until a dough is formed. Fold in the freeze-dried strawberries.

3.    Using a cookie scoop, scoop the dough. Transfer to a plate or container. Place in the refrigerator.

4.    Optional: coat each bite in a glaze. The glaze is a mixture of powdered sugar and nondairy milk. There are no specific measurements. Slowly add both to a bowl and continue to whisk until desired consistency.

Be sure to store the bites in either the refrigerator or freezer. They should last up to one week in the refrigerator. Feel free to reach out with any questions!
