Cinnamon Chip Bars

Flavorful, Fluffy, Delicious

These cinnamon chip bars are light and fluffy and so delicious. Everyone who has tasted these has loved them. You would never know they are vegan and made with healthier ingredients.

These bars only have 1/3 cup of added sugar. When you divide this by each piece, there is hardly any sugar in each. If added sugar in recipes is something you watch out for, you have to try these.

I use a combination of almond flour and all-purpose flour in these. This flour combination has quickly become my go-to. The texture turns out ultra-fluffy.

 These bars are super versatile and can be customized to your liking. If you want to keep the cinnamon but not add the chocolate, you can do that. If you want to add nuts in with the cinnamon and chocolate, that works too. The base of these bars can really be used for any add-ins.

Vegan butter: any nondairy butter will work. Make sure you are melting your butter. I haven’t tried traditional butter; however, I assume it will work the same.

Sugar: any GRANULATED sugar will work (brown, white, etc.) Make sure it is granulated otherwise the bars will come out differently.

Applesauce: I wouldn’t recommend substituting the applesauce. However, if you really need a substitution, banana or oil should work. Obviously, the taste will not be the same and the texture may be a little different which is why I don’t recommend substituting it.

Nondairy milk: any nondairy milk will work. I used almond milk. Traditional milk should also work.

Chocolate chips: any chocolate of your preference will work. You can chop a chocolate bar or use a mix of chocolates.

In this recipe, I used 1 teaspoon of cinnamon. You can adjust this to your liking. With 1 teaspoon, you still get a hint of cinnamon without it being too overpowering. Either way, the amount of cinnamon is up to your preference.

 Ingredients:

  • Vegan butter

  • Sugar

  • Applesauce

  • Nondairy milk

  • Baking powder

  • All-purpose flour

  • Almond flour

  • Cinnamon

  • Chocolate chips

Recipe:

  • 3 tablespoons melted vegan butter

  • 1/3 cup sugar

  • 1/3 cup applesauce

  • ¼ cup nondairy milk

  • 2 teaspoons baking powder

  • 2/3 cup all-purpose flour

  • ¼ cup almond flour

  • 1 teaspoon cinnamon

  • ½ cup chocolate chips

Directions:

1.    Preheat your oven to 350 degrees Fahrenheit.

2.    Line a 9x5 baking pan with parchment paper or spray with cooking spray.

3.    In a small bowl, melt the butter.

4.    Transfer to a larger bowl and add the sugar, applesauce, and nondairy milk.

5.    Stir to combine.

6.    Add in the baking powder, all-purpose flour, almond flour, and cinnamon.

7.    Stir until a batter is formed.

8.    Fold in the chocolate chips.

9.    Transfer to the baking pan and bake for 30-40 minutes.

Allow to completely cool before eating. Store in a container in the refrigerator. these will last up to 5 days in the refrigerator. If you want them to last longer, store in the freezer and allow to thaw for 15 minutes before eating.
